Welcome to Food Friday

Happy to have my computer back this Friday, I decided to post an entry for "Food Friday."  

This dish is good for breakfast, lunch or dinner.   I call it;

Linda's Hobo Hash (you can of course rename it)

Already baked potatoes, bacon (I get the already cooked stuff), ham or sausage, eggs, green onions (optional) and grated cheese. 

I slice up the cold, already baked potatoes, and fry them in some Olive Oil.   Then set them aside while I heat (or cook) the meat I've chosen, when the meat is done I put that with the cooked potatoes.  Then you scramble the eggs (if you want, you can chop some little green onions into the raw eggs.)....when they are done, season and add the potatoes and meat stirring them all together then adding some grated cheese, allowing it to melt into the mixture.  I like to fry the potatoes with the skins on (remember that's where all the vitamins are) but you can peel them if you want to.   NOTE: quantities for all items depend on how many you're cooking for. 

You can see, I've cooked these potatoes with the skins....they get nice & crispy.

 

The skies over my house are alive with airplanes again this morning.  There were lots of planes of different sizes flying into McChord AFB yesterday afternoon & evening.

  3. My MIL use to make this all the time.  I love leftover potatoes fried anytime!
    Just the potatoes and onions frying smell so wonderful.

    My son is interning at the Business Examiner in Tacoma and he got to fly in a cargo plane today.  Anyway he may have been in one of the planes  you saw flying overhead today.

I make something very similar except I put the potatoes, meat and chunks of leftover french bread, dinner rolls or biscuit in a pan sprayed first with pam and then just whip up the eggs with a bit of milk, pour over everything and bake for about 20 minutes. It can be topped with cheese during the last 5 minutes.
