FOOD FRIDAY

As fall marches in and summer marches out~I decided to give you a recipe to file away for those cold, rainy & windy days when you want to fix something that will fill up the tummy's but not take a long time to prepare.

Baked Bean Quickie

1 pound ground beef, ¼ cup green pepper chopped (opt), ½ cup minced onion, ½ cup diced celery (I just use 1 teaspoon celery salt), 1 (8oz) can tomato sauce, ½ cup water, garlic salt, 1 teaspoon dry mustard, 2 tablespoons wine vinegar, ½ cup brown sugar and 2 cans Pork & Beans.

Brown ground beef until done, drain off grease.  Saute onions, green peppers & celery until tender and transparent. When fully cooked, place ground beef, onions, green peppers & celery into oven proof casserole dish.  Add tomato sauce, water, dry mustard, wine vinegar, brown sugar and pork & beans and stir until well blended. Bake for 1 hour at 375°.  Serves 4 to 5 people.  Anything left over can be reheated for the next day & it tastes even better!

When I make this dish I rarely have green peppers, celery & onions on hand. I use celery salt and dried minced onions and dried green pepper flakes when I can find them.   I love to make this because it only takes 1 pound of burger and frequently the Pork & Beans are on sale for like 3 cans for $1 so if you can get 6 cans, you have the Pork & Beans for 3 batches of this dish.
