I call this Ruthie's Egg Dish because I got it from my friend Ruth who lives in Hoodsport, WA. I've eaten it many mornings at their house.
Ruthies Egg Dish
10 beaten eggs (beat with electric mixer), 1 pound grated Jack cheese, 4 teaspoons baking powder, 2 tablespoons flour, dash of salt and pepper, 1 small can of mild diced chilies~drained. Mix all ingredients well.
Melt butter to coat 9 inch by 11 inch pan. Pour mixed mixture into buttered pan and bake at 400 degrees for 10-15 minutes or until toothpick comes out clean.
This is great with salsa and/or sour cream over the top after it's dished up.

Yum! We have a family favorite egg dish too. I will have to send you the recipe! This year Michael is making breakfast...chorizo, eggs and tortillas!
I make the same dish, but add chopped up ham, & diced onions...to mine.
Yummy.
Of course I don't really cook anymore, since I don't have a kitchen, but there was a day when I was quite a cook!
