This time of the year the main ingredient is very easy to find. I've made several loaves now, using this recipe and it's very good.
ZUCCHINI BREAD
3 eggs
1 cup oil
2 cups peeled, grated zucchini
3 teaspoon vanilla
3 cups flour
2 cups sugar
dash of salt
1 teaspoon baking soda
1 and 1/2 teaspoon ground cinnamon
2 teaspoons baking powder
1 cup chopped nuts (optional)
In large bowl beat eggs until foamy. Add oil, sugar, grated zucchini and vanilla. Mix lightly. Add dry ingredients and mix well. Grease 2 loaf pans and add mixture. Bake at 325* for 1 hour or until done.

This is the exact recipe I use, one I got from one of my Amish cookbooks. I can attest to the fact that it IS delicious, and Ken also loves it. I use pecans, and I also sprinkle the top with cinnamon and sugar before I pop it in the oven. YUM!
I haven't made zucchini bread in YEARS, but I love it!! Can I substitute applesauce for the oil?? Maybe I'll try that.
