FOOD FRIDAY (on Saturday)

Ok, ok....I know it's Saturday evening but I've been busy with this carport sale thing.  It's going well, even though today the weather was less than perfect.  We had temps in the low 60's with wind, rain & sun.  The people came between showers and about half of them were eager to spend some money.  Ok...enough of that.  Here's my recipe for this week.

Alaskan Salmon Loaf

1 (1 pound) can salmon, drained and flaked

2 cups soft bread or cracker crumbs

1 tablespoon chopped onion

1 tablespoon butter, melted

½ teaspoon salt

½ cup milk

1 slightly beaten egg

Picante Sauce (optional)

In a bowl; combine salmon, crumbs, chopped onion, butter & salt.  Combine milk and egg adding to salmon mixture and mix thoroughly. Shape into a greased loaf pan.  Bake at 350* for 35 to 40 minutes.  This recipe only makes 3 or 4 servings so if you need more you could double the ingredients and perhaps adjust cooking time.  If you wish you can serve with Picante Sauce.

Picante Sauce (if you don't have store bought)

Cook 2 tablespoons chopped green onion in 3 tablespoons butter until tender, but not brown.  Blend in 2 tablespoons all purpose flour, ½ teaspoon salt, ½ teaspoon dry mustard and a dash of pepper.  Add 1¼ cups of milk and 1 teaspoon Worcestershire sauce.  Cook stirring constantly until sauce thickens and bubbles.

(glad the carport sale is going good; hard when the weather won't cooperate though)

Mmm . . . sounds delicious Linda!  We love Salmon loaf.  I usually make a cream sauce or lemon butter sauce to serve with mine, but this picante sauce sounds really wonderful!  Thanks so much for the lovely Birthday card that you sent me!  How very thoughtful of you!  It really made my day!

Hi Linda---a bit behind in mail here..lol as in over 500. Great Salmon Recipe! yeah that rain sure did come down--it like poured! That was quite a downfall lol! and its August??? Lol--weather sure is crazy all over this year! Sounds like fun having a garage sale. hips been bothering me the last few days and finally I had to just lay flat-tough getting old...got pickles to can but just cant do it yet..ok, off to more mail and saving your recipe=sure looks good!
