Egg Casserole ~ Perfect for Easter Brunch
10 eggs beaten with a mixer
1 pound grated yellow cheese of your choice (I use Monterey Jack)
1 carton small curd cottage cheese
4 teaspoons baking powder
2 tablespoons flour salt & pepper
1 small can of mild diced chilies (drained)
Mix all ingredients together and pour into a 9 x 13 inch baking pan, coated with melted butter. Bake at 400* for 10-15 minutes then lower heat to 350* and bake for approximately 35 minutes or until inserted toothpick comes out clean. Your favorite salsa makes a great topping for this egg casserole.
