FOOD FRIDAY

This time of the year the main ingredient is very easy to find. I've made several loaves now, using this recipe and it's very good.
ZUCCHINI BREAD
3 eggs
1 cup oil
2 cups peeled, grated zucchini
3 teaspoon vanilla
3 cups flour
2 cups sugar
dash of salt
1 teaspoon baking soda
1 and 1/2 teaspoon ground cinnamon
2 teaspoons baking powder
1 cup chopped nuts (optional)
In large bowl beat eggs until foamy. Add oil, sugar, grated zucchini and vanilla. Mix lightly. Add dry ingredients and mix well. Grease 2 loaf pans and add mixture. Bake at 325* for 1 hour or until done.

Glad you've started the Food Fridays again, Linda. I used some of them last year, and gave the crock pot Apple Butter recipe to some friends.
Have a good day, my friend.

This is the exact recipe I use, one I got from one of my Amish cookbooks. I can attest to the fact that it IS delicious, and Ken also loves it. I use pecans, and I also sprinkle the top with cinnamon and sugar before I pop it in the oven. YUM!

I haven't made zucchini bread in YEARS, but I love it!! Can I substitute applesauce for the oil?? Maybe I'll try that.

Imagine my suprise to find I'd been missing out on all sorts, like this lovely zucchini bread!!! Glad to know you are ok, and will now have to play catch up on all your posts!!! xxoo
