FOOD FRIDAY

HOLIDAY CRANBERRY QUICK BREAD
4 cups flour
2 cups granulated sugar
1 teaspoon salt
1 tablespoon baking powder
1 teaspoon baking soda
½ cup shortening
2 eggs
1 ¾ cups orange juice
2 tablespoons grated orange peel
2 cups chopped cranberries
1 cup chopped walnuts

In a large bowl mix flour, sugar, salt, baking powder & baking soda.  Cut in shortening until mixture resembles coarse crumbs.  In a separate bowl beat together the eggs, orange juice & orange peel. Mix until blended.  Stir into the flour mixture until flour is moistened.  Gently stir in the cranberries and walnuts.  Spoon batter into two greased & floured loaf pans.
Bake at 350 degrees for 55 minutes.  After baking, cool on wire racks for 15 minutes, then remove from pans to continue cooling.

You can also bake this in the smaller loaf pans for giving as gifts, etc before or during the holidays (just adjust baking time for the smaller pan).  This bread, tightly wrapped freezes well for several months.

Hmmmm I've never had this and it sounds yummy! Can you use the cranberries that come in the package like raisins do?

I use fresh, whole cranberries but I would think dehydrated canberries would work ok. I'm sure they would plump up in the batter & be quite tasty.
