Holiday Cranberry Quick Bread

I've had quite a few emails regarding this recipe so here it is, it really is easy and very tasty.

Holiday Cranberry Quick Bread

4 cups flour, 2 cups sugar, 2 teaspoon salt, 1 tablespoon baking powder, 1 teaspoon baking soda, cut in 1/2 cup shortening.  Mix these ingredients together until they resemble coarse crumbs.  In a separate bowl beat 2 eggs, 1-3/4 cup orange juice, 2 tablespoon orange peel and then stir into flour mixture.  Fold in 2 cups chopped cranberries and 1 cup chopped walnuts (optional of course).   Spoon into two loaf pans evenly and bake at 350* for 55 minutes (or until a toothpick comes out clean).  Cool pans on wire rack for about 10 mins and then remove loaf from pan and continue cooling.  Let bread stand at room temperature for two hours then you can wrap each loaf in plastic wrap. 

We have frozen well wrapped loaves for up to a few weeks for gift giving later in the season.   Enjoy !

Thanks for sharing this I'm going to try it out.  It's at the same temp and min as my banana bread so I can make them together :)
