FOOD FRIDAY

Taco Soup

½ pound ground beef, ¼ cup chopped onion, ½ chopped green pepper, 1-8 ounce can tomato sauce, 1½ cup water, 1-16 ounce can stewed tomatoes, 1-16 ounce can kidney beans, 1 package taco seasoning, shredded cheese and corn chips.

Brown ground beef & onion, drain fat. Add water, green pepper, tomatoes, undrained beans, tomato sauce & taco seasoning,  mix well. Simmer for 30 minutes.  Serve soup in bowls topped with grated cheese & crumbled corn chips.  Sour cream may be used as an additional topping.

Note: as you can see, this will only serve 3 or 4 people. To serve the whole gang, just increase the amounts on the ingredients.  Also, if a full package of taco seasoning is too much for your taste, just add a partial package. 

This soup is so good !  And with fall and winter coming...I'll be making it again, myself.  And the best part...it's really good warmed up the next day.

Ken's cousin made taco soup for us when we were visiting once, and I loved it! (I think she used chicken, though.) Now that it's starting to get cooler, I'm beginning to think about making soups. I got the stuff to make chili this weekend, in fact. I've never made taco soup, but I want to try it. Thanks for the recipe!
