FOOD FRIDAY

Cranberry Jello Salad

Dissolve 1 - 6oz box of raspberry jello & 1 cup boiling hot water in a bowl. Add 1 can whole cranberry sauce, 1 - 16 ounce can crushed pineapple (drained with juice reserved), 2/3 cup of the pineapple juice & 1/2 cup chopped walnuts (optional). Mix well then pour into a 9 x 12 pan and chill until firm.

Topping~ 1 cup heavy whipping cream & 1 - 12 ounce package of whipped cream cheese. Whip heavy cream until thickened and then fold in cream cheese. Spread over the top of chilled jello and refrigerate until ready to serve.


Note~thanks to my friend Judy for this recipe. I served it last year as part of my family Christmas dinner and will probably make it again this year. It's so easy to make and very good. My recipes from now on will probably be geared towards holiday meals. Linda

My youngest daughter could eat the cans of cranberry sauce by itself. She would probably love this. I may have to try some and see if she likes it. Thank you for sharing.
