FOOD FRIDAY

I let it slip by last week so today I'm leaving you with 2 recipes you might consider using this next week. Enjoy..........Linda

Breakfast Egg Casserole
With a mixer beat 10-12 eggs, add 1 pound grated jack or cheddar cheese, 1 small carton of small curd cottage cheese, 4 teaspoons baking powder, 2 tablespoons flour, 1 small can of mild diced chilies (drained), a pinch of salt & pepper. Mix all these ingredients well and pour into a 12 x 9 baking pan, that you've coated with melted butter. Bake at 400* for 10-15 minutes, then turn oven down to 350* and bake for an additional 35 minutes or until a toothpick comes out clean.


Holiday Cranberry Nut Bread
Mix together; 2 cups flour, 1 cup sugar, 1-1/2 teaspoons baking powder, 1 teaspoon salt and 1/2 teaspoon baking soda. Stir in 3/4 cup orange juice, 2 tablespoons vegetable oil, 1 tablespoon grated orange peel and 1 well beaten egg.

Mix until well blended. Stir in 1-1/2 cups fresh or frozen cranberries (coarsely chopped) & 1/2 cup chopped nuts. Spread evenly in a well greased 9" x 5" loaf pan and bake in a pre-heated 350* oven for 55 minutes(Or an inserted tooth pick comes out clean). This recipe will make one full loaf or two small ones. This is a great holiday treat.

Two great recipes Linda. YOu can't beat a Breakfast Casserole for those times when you have company overnight and want to give them something hearty and tasty in the morning without a lot of fuss! That bread sounds posively delicious!
