FOOD FRIDAY

My mom made this version of meatloaf during my growing up years. I've been making it for the last 45 or so years. Mom got it off the side of the Quaker Oatmeal container but I call it.........

Mama's Meatloaf
1-1/2 pounds lean ground beef
1 cup tomato juice (I use one of the little 5.5 fl oz cans that comes in a 6 pak)
3/4 cup Quaker Oats (quick or old fashioned)
1 egg beaten
1/4 cup chopped onion
pinch of salt and pepper and a little garlic powder

In a large bowl, combine all ingredients, mixing lightly but thoroughly. Press into a loaf pan. Drizzle catsup over the top of the meatloaf before baking 1 hour at 350* letting stand at least 5 minutes after that hour. Drain any grease and serve.

that's the way i make it too.
for variety:
sometimes i add a 1/2 can of drained mixed veggies to the mix. other times i top cooked meatloaf with mash potatoes, back in oven to let it sltly brown.

Never made it with oatmeal before , I wonder if that'll still taste good with cheese in it?

You're not going to believe this but meatloaf is one of my favorites. I like it served hot and I like it cold the next day on a sandwich with onions and mustard.

I think my mom used this same recipe! I remember her putting oatmeal in it!! we haven't had meat loaf in a long time; thanks for the reminder!

I always hated meatloaf when I was growing up. It's only been since I've become an adult that I have learned to appreciate it in any way.

Why have I never heard of meatloaf with oatmeal instead of bread? I'll have to try it! By the way, I love the point defiance picture! A clear, sunny day makes all the difference, they really capitolized on the view when they remodeled. Love you, Becky
