Linda's Quick & Easy Vegetable Soup
1 can beef broth, 1 can vegetable broth, 1/2 can water, 1 can cut green beans, 1 small can whole kernel corn, 1 can mushroom pieces, 1 can cooked diced tomatoes, 1 can kidney, pinto or northern beans, 1 can sliced carrots, 1/3 cup barley, minced onion (I use the dried) & some garlic powder.
Put all these ingredients in a large kettle and cook on medium heat for a couple hours. Stirring occasionally. You don't need to add any salt because the salt in the canned veggies will be plenty. This is so good, very filling & the left overs are good warmed up. And like I said, anyone with a can opener & a kettle can make it.
We had a great Christmas Eve and Christmas Day with Bob's kids. I've retrieved Gabi from my grand daughter and have been busy all day getting ready for my Christmas dinner tomorrow.
