FOOD FRIDAY

It may be the day after Christmas but it's also Food Friday. Here's a simple recipe that anyone with a can opener can make.

Linda's Quick & Easy Vegetable Soup

1 can beef broth, 1 can vegetable broth, 1/2 can water, 1 can cut green beans, 1 small can whole kernel corn, 1 can mushroom pieces, 1 can cooked diced tomatoes, 1 can kidney, pinto or northern beans, 1 can sliced carrots, 1/3 cup barley, minced onion (I use the dried) & some garlic powder.

Put all these ingredients in a large kettle and cook on medium heat for a couple hours. Stirring occasionally. You don't need to add any salt because the salt in the canned veggies will be plenty. This is so good, very filling & the left overs are good warmed up. And like I said, anyone with a can opener & a kettle can make it.

We had a great Christmas Eve and Christmas Day with Bob's kids. I've retrieved Gabi from my grand daughter and have been busy all day getting ready for my Christmas dinner tomorrow. I'll try to do an entry about our time in Enumclaw, either Sunday or Monday. I hope everyone had a good couple of days....until next time. Linda

Your soup sounds just perfect. I always use tomato juice or vegetable juice when making home made soup.

This sounds yummy! I am going to have to copy it and try it. My husband and I are really into soup right now. We have tried like 6 new soup recipes in the last month. Linda

I'm going to have to try this..I love soups...maybe I'll use chicken broth instead! Aren't you glad the snow has melted mostly around here? Man, was it dicey driving around last week on the back roads here in Seattle. It's clear at the foothills right now and Mt. Rainier is looking very cool..may need to go on a photo walk soon...I'm trying to unclutter at the moment ...um..I mean right after I get off my computer...lol...:)
