Spinach Salad
2 bunches fresh spinach (torn)
3 or 4 hard boiled eggs (sliced)
6 or 8 mushrooms (chopped
2 tomatoes (cored and cut into bite size pieces)
2 or 3 green onions (sliced)
Dressing
1/3 cup vinegar
1/2 cup sugar
1-1/2 teaspoon salt
1/2 clove garlic (chopped)
Mix all ingredients except oil and blend well. Slowly pour in oil and let set over night. Drizzle over salad when ready to serve
